Roasted Lemon Parmesan Asparagus Recipe
A delicious and easy side dish for spring!
Well since tomorrow is my birthday I thought I'd share something with you, one of my favorite easy recipes! Roasted Lemon Parmesan Asparagus! You know, I've got to send it out before I get all old and forgetful, at least that's what my little kids think! My four-year-old told me, "Mom, you're ancient!" (Something she learned from Frozen 2!) She's so sweet!
Anyway, back to food. I have no idea when my love affair with asparagus started. I didn't grow up eating it (Ya know, waaaaay back when! Ha!) . I can't remember the first time I decided to try it. But, I'm so glad I did!! This has become one of our favorite easy side dishes, especially in the springtime!!
I love easy recipes, especially ones that are healthy and delicious! I remember whenever I saw asparagus it was covered with hollandaise sauce and it wasn't appetizing to me. Maybe that is delicious, but the sauce is made of lemon, butter, and eggs yolks, so it does add some calories and the extra step of making the sauce. This recipe is light and quick to make, and still has the lemon flavor so it's a good alternative to the hollandaise sauce. It is great with any main dish, and my boys love it! You can adjust the quantities and seasonings as needed. I hope you all enjoy it too!
